Oatmeal Raisin Cookies

The kids and I love to do Sunday baking.  It doesn’t happen every Sunday, but it is fun when we have the chance and it helps to make Sunday dinner a little extra special!  Sometimes it is fun to try something new, but it is always great to make those tried and true recipes that you have been making for years.  A few weeks ago I was in the mood for oatmeal raisin cookies, it had been a long time, and I am so glad this was the chosen treat because I was reminded how good these are!  Soft and chewy cookie perfection!  

To begin preheat your oven to 350 degrees.  Measure out your raisins and soak them in a bowl of water.   In the bowl of your mixer with the whisk attachment cream together butter, white sugar, and brown sugar until smooth.  Add in the eggs and vanilla and mix it all up.  

In a separate bowl whisk together flour, baking soda, baking powder, cinnamon, and salt.   Now with the paddle attachment on your mixer gradually add in your flour mixture.  

When that is mixed up add in your oats and drained raisins.  Mix on low until combined. 

To make each cookie use about 2 tablespoons of dough spaced out about 2 inches apart.  I have this perfect little cookie scoop from The Pampered Chef that makes the perfect little 2 tablespoon cookie balls.  I love it for this recipe and making chocolate chip cookies too!  So nice to have all my cookies come out the same size. 

I also prefer to use stoneware when making any kind of cookies.  They always cook softer and more even when using my stoneware.  I have thrown out pans of cookies before because I got lazy and didn’t want to wait for one of my 2 stoneware pans to be out of the oven and just used one of my metal cookie sheets.  You can totally tell the difference!  

Bake at 350 for about 11-13 minutes until slightly golden brown.  Just keep your eye on them in case your cookies are bigger or smaller.    Cool slightly on the pan and then remove cookies to a cooling rack.  

Try not to eat them all up at once!  Store any you have left over in an air tight container. 

Makes about 3 dozen cookies.  I am loving this bakers twine.  I bought a variety pack of different colors on amazon and have gotten so much use out of it already.  So fun for wrapping around little gifts or goodies!

Ingredients
  • ¾ cup butter, softened

  • 1 cup raisins

  6. Add in your oats and drained raisins. Mix on low until combined.
  7. Use approximately 2 tablespoons of dough for each cookie, spread out about 2 inches apart on ungreased cookie sheets.
  8. Bake 11-13 minutes or until slightly golden brown.
  9. Cool slightly on the pan and then remove cookies to a cooling rack.
