Oatmeal Raisin Cookies

Ingredients
  • ¾ cup butter, softened
  • ½ cup white sugar
  • ¾ cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon kosher salt
  • 2¾ cups rolled oats
  • 1 cup raisins
Instructions
  1. Preheat oven to 350 degrees.
  2. Soak your raisins in a bowl of water and set aside.
  3. In the bowl of your mixer with the whisk attachment cream your butter, then add in the white sugar and brown sugar and cream until smooth. Add in the eggs and vanilla and mix it all up.
  4. In a separate bowl whisk together flour, baking soda, baking powder, cinnamon, and salt.
  5. Now with the paddle attachment on your mixer gradually add in your flour mixture and mix until combined.
  6. Add in your oats and drained raisins. Mix on low until combined.
  7. Use approximately 2 tablespoons of dough for each cookie, spread out about 2 inches apart on ungreased cookie sheets.
  8. Bake 11-13 minutes or until slightly golden brown.
  9. Cool slightly on the pan and then remove cookies to a cooling rack.
