Okay you guys so I think this is going to be my last post about apples for a while. Maybe you are all woo hoo!!, or if you have enjoyed my apple posts I still have more to share that I will post next year. I love baking/cooking with apples this month but let’s be honest, it is almost October and in my world everything becomes all about the pumpkin! But for now one last apple post. This apple bread is a loved favorite around here to get us in the mood for fall!
Preheat your oven to 350 degrees. In a large bowl mix your flour, cinnamon, baking soda, salt, and baking powder together.
Peel, core, and dice up your apples.
In the bowl of your mixer with the whisk attachment beat your eggs and then add in the sugar, oil, and vanilla.
Add in your dry ingredients and then with your paddle attachment slowly mix it in. If you turn the mixer on too high at first flour might fly everywhere. You can increase the speed once your flour is combined.
Finally slowly mix in your apples.
Spray two loaf pans with cooking spray and then divide your batter evenly among both pans. I only have one stoneware loaf pan but I love baking with stoneware when I can!
In a small bowl mix up your cinnamon and sugar.
Sprinkle evenly over the top of your batter.
Bake at 350 degrees for 50-55 minutes. Check the center with a toothpick to make sure it is not gooey and is all done. Let the bread cool on a cooling rack for about 20-30 minutes before removing from the pan.

Apple bread tastes too good. I add lots of vanilla to get additional taste. It is a great snack for the breakfast.
Good idea for breakfast and more vanilla is always good!
