Tater Tot Breakfast Casserole

I have always been a fan of regular (dinner) Tater Tot Casserole, we have a recipe that we just love!  So recently I thought it would be fun to come up with a breakfast version.  I have made this a couple of times now and it is a keeper!  With Easter coming up next week I thought this would be a good one to share in case anyone is looking for something yummy to try for Easter breakfast.  

Start off by cooking up your sausage and bacon.  When those are done chop up your bacon.

Preheat your oven to 375 degrees.  Spray a 9 x 13 inch pan with cooking spray and add your sausage and spread evenly on the bottom of the pan.  Then add your tater tots and put them in a single layer as best you can and sprinkle the chopped bacon on top. 

In a large bowl whisk up your eggs.  Add in your milk, sliced green onions, salt, ground mustard, and grated cheese.  Mix it all together.

Pour the egg mixture over the top of your meat and tater tots.  With a spatula help spread your cheese around to make sure it is even all over your casserole.  

Bake in a 375 degree oven for 50-55 minutes!

Ingredients
  • 1 pound regular breakfast sausage
  • 4 strips of bacon cooked and chopped
  • 16 oz tater tots or half the bag
  • cooking spray
  • 12 eggs
  • 2 cups milk
  • ½ of a bunch of green onions, sliced
  • 1 teaspoon kosher salt
  • 1 teaspoon ground mustard
  • 2 cups shredded cheddar cheese (shred your own)
Instructions

    What a great looking savory dish… this would be wonderful for breakfast, but we would also possibly use it for supper and add a salad and side. Thank you for the recipe. 🙂

      Yes it would also make a great supper! The last time I made it the first night we had it for supper! Then the next two days my daughter and I had it left over for lunch! Totally good anytime!
