I have just been over here this week trying to get all the things accomplished that I want to get done before we go back to school. I always save things for the summer that are just too hard to get to during the school year. I still have 3 full weeks but I can’t believe how quickly it is going!!
I did share this week a quick and easy meal idea that also sticks with my gluten free and AIP diet!

Our featured post this week belongs to Mommy Evolution and her post Red Apple Rice Krispie Treats. With back to school happening for most, or soon to be for the rest, I thought these are just the cutest thing to celebrate back to school! Back when my oldest was younger and still at public school, I would always make a fun treat to welcome her home on the first day and then let her pick her dinner of choice that night. I always liked to make it special. I think these would still be a fun treat for me to make for my kids this year….just with gluten free rice cereal of course!

Great recipe I’m Celiac, so all gluten free recipes are great! I’m also lactose intolerant, I’m unfamiliar with the AIP diet though? What does that stand for?

Sorry to hear you are celiac too! No fun! I avoid dairy as well, most the time, to cut down in inflammation. AIP stands for Autoimmune Protocol Diet. If just cutting out gluten is enough for you I don’t recommend it as it is a super strict and restrictive diet. If you still get other inflammation and weird autoimmune symptoms it is great for relieving those symptoms naturally without medication. I follow the book The Autoimmune Solution my Amy Meyers.
