Pumpkin Bread

- 2 cups all purpose flour
- 2 cups white sugar
- 2 (3.4 oz) packages instant vanilla pudding mix
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1½ teaspoons cinnamon
- 1¼ cups vegetable oil
- 5 eggs
- 2 cups canned pumpkin puree
- Preheat the oven to 325 degrees.
- Spray two 9 x 5 inch loaf pans with cooking spray.
- In the bowl of your mixer add the flour, sugar, pudding mix, baking soda, salt, cinnamon, vegetable oil, eggs, and pumpkin.
- Mix with the paddle attachment until it is well blended and then pour into the prepared pans.
- Bake for 1 hour or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let stand 10 minutes on wire racks, then remove the bread from pans to finish cooling.
