With Easter fast approaching I thought I would share my favorite Carrot Cake that I make every year. I just used gluten free 1 to 1 flour last year and it still came out amazing!

I haven’t done any planting yet but my husband and I did get out and clean up the patio and the yard. Social distancing has caused my husband to set up a net in the backyard where her can hit golf balls. While he’s out there, he’s been pulling weeds. Sounds like a win to me! 🙂

I haven’t started a vegetable garden, but I too have found it therapeutic to dig in the dirt and be outside. Gotta do what helps us feel better!
